
My first 4th of July celebration while living in USA is taking place today. I couldn’t give you any other recipe than a burger today. But instead of comparing with the American burgers, I made a danish inspired hamburger.
This is a hamburger made of beef served with home-made burger buns, creamy goat cheese, tasty pickled cucumbers and a pea pesto which I think is outstanding!
Ingredients (4 pers):
Burger with goat cheese
- 1 lb ground beef
- salt, pepper and olive oil
- 4 tbsp fresh goat cheese
Brioche rolls
- You find my recipe here
Pickled cucumber
- 1 cucumber
- 1 cup water
- 3 tbs granulated sugar
- 2 tbs vinegar
- 0.5 tsp salt
Pea pesto
- 1 cup peas
- 1 pot fresh dill
- 1/3 cup whole almonds
- 1/3 cup olive oil
Topping
- 8 cherry tomatoes
- 1 romaine lettuce
- red beet sprouts
- fresh thyme
Pickled cucumber
Wash the cucumber and cut in slices. Add water, sugar, vinegar and salt in a saucepan and slowly heat until the sugar has melted. Place the cucumber slices in a glass jar with lid. Pour the heated water mixture over the cucumber slices. If you have time, let the cucumber stay cold in the refrigerator for an hour before serving.
Pea pesto
Mix peas, dill, almond and olive oil in a food processor until the almonds are ground and the pesto has a smooth texture.
Burger with goat cheese
Mix the ground beef with salt and pepper in a bowl. Form the mixture to four burgers by using your hands (wash your hands in cold water before forming the burgers). Fry the burgers in olive oil in a pan (or on the grill) for approximately 3 minutes on each side depending on how you want your burger fried.
Cut the goat cheese in thick slices and add one slice on each burger.
See brioche bun recipe for the buns. Quickly heat the buns on the insides. Add some pea pesto on the bottom bun part. Then add lettuce followed by the burger with goat cheese. Place slices of tomatoes and pickled cucumbers around the burger. Top the burger with beet sprouts and fresh thyme. Add some pea pesto on the top bun part.
Ready to serve. Smaklig måltid!
