Brioche rolls for burgers

After starting to bake my own hamburger rolls, I think it’s difficult to buy ready rolls (if you’re not in a really big hurry). I have tried different recipes but these brioche rolls are my favorite. Brioche rolls are perfect for burgers. They have a soft and delicious inside, and a harder outside which makes it easier for all ingredients to stay inside the hamburger when you eat it.

Ingredients ( 12 rolls)

  • 1 pack dry yeast (6-8g)
  • 4 1/4 cups all purpose flour plus extra for dusting
  • 0.2 lb melted butter
  • 1 1/4 cup whole milk
  • 1 egg
  • 1/2 tsp salt
  • 1 tbs caster sugar
  • 1 extra egg for brushing
  • sesame seeds

Mix the yeast with the flour in a bowl and let it rest for 5 minutes. Use a saucepan to melt the butter. Take it from the heat and then pour in the milk. Add the egg, salt and sugar and make sure it’s all mixed. Now use a baking mixer/blender. Add carefully the yeast and flour mix into the milk mix while stiring. The dough should be well mixed together but it will be sticky which is also should be. Cover the bowl with a baking towel and leave for 1 hour to rise. Divide it into 12 equal pieces (approximatly 0.15lb/piece). Shape each piece into a smooth ball. Place them on a tray covered with a baking sheet. Cover with a baking towel and leave for another 1 hour to rise.
Heat your oven to 420°F. Bruch each roll with beaten egg. Garnish with sesame seeds.
Bake in the middle of the oven for 12 minutes (until they have the color you want).
Serve with a vegetarian, chicken, fish or regular hamburger.
