Green salad with grilled peaches, walnuts and olives

During the Summer, I prefer to do really simple salads. One of the salads served often in our house at the moment is a green salad with grilled peaches. The Florida or Georgia peaches are now perfect – fresh, succulent and tasty. The sweet grilled peach is a perfect match with crispy walnuts, olives and an acid feta cheese. Enjoy!

Ingredients (4 pers): 

  • 4 peaches
  • 1 tbsp olive oil
  • 2 romaine lettuces
  • 2 avocados
  • 1 red onion
  • 1/3 cup cupped waltnuts
  • 1/3 cup black pitted olives
  • 1 1/2 tbsp olive oil
  • 1/2 lemon (juice)
  • salt and pepper
  • 8 oz Feta cheese
  • 1 tbsp creamy balsamic reduction
  • fresh mint

Pit the peaches and cut them into bigger slices. Brush the peach slices on both sides with some olive oils. Before you grill the peaches slices, prepare the salad.

Wash, cut and place the romaine lettuce on a serving plate. Peel, pit and cut the avocado in smaller pieces and spread over the lettuce. Cut the red onion and spread the onion, walnut pieces and olives over the salad. Pour the olive oil, lemon juice over the salad and flavor with salt and pepper. Use your hands breaking the Feta cheese in pieces and spread over the whole salad.

Grill the peach slices on the grill for a couple of minutes on each side (or in a pan).

Place the peach slices over the salad and finish with pouring the balsamic reduction over the salad together with some fresh mint.
