Vegetarian Danish sausage rolls (Pølsehorn)

Today is SUPER BOWL and my husband is really excited. And I am really excited about this recipe I will share with you today. 😉 This is a perfect super bowl snack (or appetizer) because there is a small risk of making a mess (be careful with the salsa sauce). The original recipe of Danish sausage rolls (or Pølsehorn) is a small sausage covered in bread. But as you know by now, I like to twist the recipes a bit. This time, I have made it a veggie sausage roll.

I have asked myself many time about the mini carrots in the stores. Who are they for? Now I know. They are made for the vegetarian sausage rolls! 🙂 This might sound like something quite boring, but you know what, it’s reeeeally good. The mini carrots have a lot of taste from the smoked paprika. If you want some additional taste or spices, serve it with a hot salsa sauce.

Ingredients (18 rolls): 

  • 18 organic mini carrots
  • 1/2 tbsp olive oil
  • 2 tsp smoked paprika

Bread

  • 1 1/4 cup lukewarm water
  •  1 egg
  • 2 tbsp olive oil
  • 4 2/3 cup flour (bread, wheat or all purpose flour)
  • 2 tsp active dry yeast
  • 2 tsp granulated sugar
  • 1 1/2 tsp salt

Topping

  • 1 egg
  • 1 tbsp milk
  • 1 tbsp sesame seeds
  • 1 tsp chili flakes

Pre heat the oven to 375ºF.

Wash the carrots and place them on an oven tray. Add the olive oil and smoked paprika powder and mix it all together. Bake them in the oven for 25 minutes. Turn them around a couple of times during the baking time.

Whisk water, egg and and olive oil together in a bowl. In a stand mix bowl, add 1 cup of the flour, yeast, sugar and salt. Mix it together. Add the water mixture and mix it together. Add the rest of the flour, little by little. Mix until the dough is getting smooth. Ferment for 1 hour covered by a kitchen towel.

Place the dough on a baking board and divide into 18 pieces. Roll each piece to a 4” long dough roll. Take one mini carrot and roll one dough roll around each carrot. Place them on an oven tray covered with parchment paper. Ferment the rolls, again, for 30 minutes covered by a kitchen towel.

Pre heat the oven to 375ºF.

Whisk egg and milk together and brush each roll with it. Sprinkle each roll with sesame seeds and chili flakes.

Bake the vegetarian sausage rolls in the oven for approximately 15 minutes until they get a nice golden color.

Serve as they are or together with a salsa sauce.
