
It’s not a news that red beets, goat cheese and honey is a lovely combination. But instead of boiled red beets, I wanted to try something new. I made red beet burgers which ended up being really delicious! This kind of veggie burger was new to me, but definitely not a one-timer.
They are really easy to prepare, because I bake them in the oven. I they still get this crispy surface. Serve your red beet burgers in brioche rolls or together with a fresh green salad.
Ingredients (4 pers):
- 1 lb fresh red beets
- 1 onion
- 1 garlic clove
- 2 eggs
- 1/2 cup rolled oats
- 1 tbsp oregano
- salt and black pepper
- fresh rosemary
Goat cheese cream
- 0.3 lb goat cheese
- 1/3 cup sour cream
- 1/2 tbsp honey or maple syrup
- salt and black pepper
Pre heat the oven to 425ºF. Peel and grate the red beets. Peel and grate the onion, and fry the onion pieces quickly in a pan with some olive oil until they get transparent colored.
Add grated red beets, fried grated onion and pressed garlic in a bowl and mix together. If any superfluous liquid, remove it by squeeze the beets in your hands.
Add eggs, rolled oat, oregano, salt and pepper in another bowl and mix together before adding into the red beet bowl. Mix everything together. Let stand for approximately 15 minutes.
Form 6-8 burgers (depending on how big you want them) with your hands and thereafter place them on an oven tray covered with parchment paper.
Bake the burgers in the oven for approximately 20 minutes or until you see they are starting to get a crispy surface.
While the burgers are in the oven, prepare the goat cheese cream. Cut off the sides on the goat cheese. Cut the cheese in smaller pieces and add into a bowl. Add also the sour cream and use a fork to mash the cheese together with the sour cream. Add the honey, salt and pepper. Finish with some fresh rosemary.
Serve with brioche rolls or a fresh green salad.
