Grilled whole fish (mahi mahi) with garlic and lemon

I think you already know by now that I love fish. We went to our local fish shop the other day and they had fresh mahi mahi fish which we bought. If you don’t have mahi mahi in your local store, you can go for the one you find e.g. salmon. This marinade gives the fish a fresh and delicious taste. I can’t get enough. Prepare it in the oven or on the grill.

Ingredients (4 pers):

  • 1.5 lb fresh whole fish (I had mahi mahi)
  • 2-3 garlic cloves
  • 2 tbs olive oil
  • 2 tbs butter
  • 1/2 lemon juice
  • 1 lemon
  • salt and pepper
  • 1 tsp dried parsley
  • fresh parsley

Make sure you don’t have any fish bones in your fish. Place the whole half part of the fish  on tinfoil (if you use a grill) or an ovenproof ovenware if prepared in oven. Use a bowl to mix the marinade together. Add pressed garlic, olive oil, lemon juice, dried parsley and salt and pepper into the bowl and stir. Pour it over the whole fish. Add pieces of the butter on the fish. Finish with adding slices of lemon. Make the tinfoil together before placing on the grill (or oven). Let the fish bake for 25 minutes or until the thickest part has a temperature of 137ºF.

I serve the fish with a fresh salad or with sweet potatoes.
