Fried Cod with chopped egg and shrimps, horseradish, mashed potatoes and green peas

This is a typical Scandinavian dish for a weekday dinner because it is easy and quick to prepare, but also delicious and elegant for a weekend dinner. The butter fried chopped egg and shrimps are just so good together with a perfect fried cod (or an other preferred white fish such as halibut or Mahi Mahi). The fish together with spicy horseradish and creamy mashed potatoes and green peas is just the perfect combination.

Ingredients (4 pers.):

  • 1.6 lb white fish (e.g. Cod, Halibut, Mahi Mahi)
  • 2 tbsp butter
  • 2 garlic cloves
  • pinch of salt and fresh black pepper

Butter fried eggs and shrimps

  • 1 cup chopped cooked shirmps
  • 2 eggs, boiled and chopped
  • 2 tbsp butter
  • pinch of salt and fresh black pepper

Mashed potatoes

  • 10-12 potatoes
  • 2 tbsp butter
  • 1 cup milk
  • 1/2 tsp salt
  • pinch of nutmeg

Other

  • 2 tbsp fresh grated horseradish or 2tsp concentrated horseradish
  • 1 cup green peas

Start with peeling and chop the potatoes in half or quarters depending on the original size. Boil them tender in salty water on medium heat, approximately 15 minutes. Drain the hot water. Heat the milk and butter together on low heat, and pour over the potatoes. Mix it all together with a fork or a masher. Season with salt and nutmeg.

While the potatoes are boiling, boil the two eggs for approximately 10 minutes (hard cooked).

Boil the green peas in salty water on medium heat for a couple of minutes.

Prepare the fish with cleaning it, skin can be left while frying. Slice into portion pieces if not done before. Heat the butter and two whole garlic cloves in a skillet. Season the fish with salt and fresh black pepper. Fry the fish for a couple of minutes on each side until perfectly cooked.

Chop the boiled eggs and shrimps in same size cubes. Add some extra butter into the skillet and quickly fry the egg and shrimps in the skillet on medium heat for 1-2 minutes.

When serving, start with the mashed potatoes, then place a fish fillet onto the mashed potatoes. Add a couple of spoons of the egg and shrimp mixture and scoop some melted butter over it. Finish with adding the fresh grated horseradish. Season with some extra salt and fresh black pepper. Add the green peas around the mashed potatoes. Ready to serve!
