Norwegian sun buns (Solboller)

The sun is back in Florida! It’s so nice weather again after a couple of weeks with cold and gray (for being Florida) weather. Therefore, I decided to celebrate with Norwegian Sun buns today. This is how the Norwegians’ do. When the dark winter time is over and the spring/summer is coming with the light, they bake and eat “Solboller”. Aren’t they just so beautiful with the sun (vanilla custard) in the middle?

Buns (or “boller”) is something Norwegians’ are crazy about. They also like to eat their buns with raisins or chocolate pieces. I’ll come back with the recipes.

Ingredients (16 buns):

  • 0.2 lb butter
  • 1.5 cup whole milk
  • 6 cups all purpose flour
  • 1 pack yeast (approximately 2.5tsp)
  • 1/2 tsp baking powder
  • 1/2 ground cardamom
  • 1/2 tsp salt
  • 6 tbs sugar

Filling:

Topping:

  • 1 egg
  • 1 cup powder sugar
  • 1 egg white
  • 1 tsp water (if needed)
  • coconut flakes

Start with melting butter on low heat in a saucepan. Add the milk into the butter and put to the side.

Mix 2/3 of the flour with yeast, baking powder, cardamom, salt and sugar in a blender bowl. Mix on low effect. Add the butter and milk mixture into the dry ingredients. Make sure it’s all mixed together. Then add the rest of the flour and let it continue to blend on low effect. Let the dough rest for 30 minutes until double size.

Cut the dough in to 16 pieces (all the same size) and formed them into balls. Place then on an oven tray covered with parchment paper and let them rest for another 15 minutes.

Heat the oven to 450ºF. Make an opening on the top of each bun, to make space for the filling. Make sure to not let the opening get through the bun. Add vanilla custard in each bun’s opening. Do not overfill. Brush the buns with the whisked egg (except where the vanilla custard is) and place them in the middle of the oven for approximately 12-15 minutes (until they have a golden color). Let them cool down on a grid.

Prepare the topping. Mix the sugar powder with the egg white. If it gets too thick, add some cold water. Stir until you have a smooth texture. Use a tea spoon and place the topping around the bun (not on the vanilla custard). Finish with sprinkle some coconut flakes on the topping.
