Granola

My husband loves granola! Here is my recipe of a Scandinavian granola – that means it’s not so sweet as in USA. I use honey to make it a bit sweet and crunchy, but it’s still healthy in your breakfast yoghurt, since it’s not THAT sweet. I like to use fresh berries with my granola, but you can of course add dried dried fruits and berries. Try the Scandinavian granola and tell me what you think!

Ingredients (1 big glas jar): 

  • 4 cups rolled oats
  • 1 1/4 cup nuts and seeds (e.g. sunflower seeds, flax seeds, sesame seeds, pieces of walnuts, cashew nuts)
  • 1/2 cup coconut flakes
  • 1/2 cup natural oil (e.g. rapeseed oil, sunflower oil)
  • 2 tbs water
  • 2 tbs honey
  • 1 tsp vanilla suger
  • 1 cup dried fruits/berries

Heat the oven to 300ºF. Mix oatmeal, nuts, seeds and coconut flakes in a bowl. In a smaller bowl, mix oil, water, honey and vanilla sugar together and pour the mixture in the bowl with the oatmeal mixture. Stir it all together and the place the mixture on a ovan pan covered with parchment paper. Heat in the oven for approximately 1 hour. Make sure to turn around the granola a couple of times during the baking time. Let the granola cool down. Place the granola in a glas jar with lid. Add the dried fruit or serve with fresh berries together with your breakfast yoghurt.
