Gluten free banana pancakes

This is a recipe our whole family like, including my 10 months daughter (excluding the salt). 😉 It’s a really good recipe if you want to try something else than the regular pancake recipe or just want a gluten free option. But you must be a banana fan. They have a sweet taste but still fresh and healthy option for a breakfast sweet tooth. The cottage cheese gives the pancake a really smooth texture. Ingredients (4 pers.): 

  • 2/3 cup cottage cheese
  • 4 bananas
  • 4 eggs
  • 1 1/2 cup gluten free rolled oats
  • 1/3 cup oat milk (or regular milk)
  • 2 tsp ground cardamon
  • 1/2 tsp salt
  • 1 tbsp butter

Add cottage cheese, bananas, eggs, rolled oats, milk, cardamon and salt into a food processor and mix everything together on high speed for about 2 minutes.

Use a skillet, add butter and heat to medium heat. Fry around 1/3 cup batter per time until the pancake gets a nice golden color on each side.

Serve the pancakes with some fresh seasonal fruits and cottage cheese.
