Cod with tomato, corn, avocado and cilantro

Fish can be prepared in so many different ways (find many of my different fish dishes here). This fish recipe is so simple to prepare and the result is just sooo good. Dinner is ready in less than 30 minutes.

We eat a lot of cod in Scandinavia. Here I have grilled the fish in the oven together with tomatoes, red onion and corn. Then it’s ready, I add a lot of avocado, cilantro and lime juice. You can eat it as it is, together with some bread or as fish taco together with small tortilla breads.

Ingredients (4 pers.):

  • 1 lb cod fillets
  • 4 tomatoes
  • 1/2 red onion
  • 2 cornstalks
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp ground cilantro
  • 1 tsp oregano
  • 1/2 tsp chili flakes
  • pinch of salt
  • 1 tbsp olive oil
  • 2 limes (juice)
  • 2 avocados
  • 1 bunch fresh cilantro

Pre heat the oven to 400ºF.

Place the cod fillets in an ovenware. Chop the onion in cubes. Pre boil the cornstalks (15 minutes in salty water) and cut out the corns. Slice the red onion. Place the tomatoes, corns and onion in the ovenware with the fish. Add the cumin, ground cilantro, oregano chili flakes and salt. Pour the olive oil over the vegetables and mix around a bit with your hands.

Bake the fish and vegetables in the oven for 15 minutes. Take out the ovenware from the oven. Press lime juice over the dish, cut the avocados in small cubes and spread over the dish. Garnish with a lot of fresh cilantro. Serve directly with some fresh bread or with tortilla bread and some sour cream.
