Flaxseed baguette

A crusty baguette is something I just love. It’s perfect for your family picnic, together with a tasty soup or just as a quick easy lunch. It’s not so easy to find the crusty simple baguettes here where I live, but it’s so easy to bake yourself. Try this recipe! Start in the evening and your bread will be fresh and ready in the morning.

Ingredients (4 baguettes): 

  • 1 pack dry yeast (8g)
  • 5 cups (660g) strong white bread flour
  • 2 tsp salt
  • 4 tbs flaxseeds
  • 2 cups water

Mix the dry yeast with the flour in a bowl. Add salt and flaxseeds. Add the water and stir together to form a smooth dough. Cover the mixing bowl with plastic wrap. Leave the dough to prove in the fridge for 12 hours.

Heat the oven to 475ºF and place a sheet of parchment paper on an oven tray. Sprinkle some flour on your baking board and scoop the dough out of the bowl. Carefully turn the dough and cover in flour, but try to avoid disturbing its delicate airy texture. Divide the dough into 4 pieces. Twist into baguettes and place on the oven tray.

Bake straight away for approximately 13-15 minutes or until the baguettes have a nice golden color. Leave to cool on a rack without covering.
