
We all have typical national food tastes we miss when we are away from home. The Danish remoulade sauce is one of the taste a Dane will miss when he or she goes abroad.
Danish remoulade sauce is typically served on the iconic Danish open sandwich, together with fish and even on their hotdog.
The home made Danish remoulade sauce is based on either oil or mayonnaise. The iconic yellow color is coming from either yellow mustard, turmeric and/or curry. This results in endless variation possibilities when it comes to the recipe and every Dane might have his or her own secret recipe. However, to be a Danish remoulade sauce, the result is always a salty and creamy sauce with fine chopped vegetable such as pickles, carrots and capers.
I serve my remoulade sauce in a typical Danish way; with fish, a fresh green salad and dark bread. This is a simple and delicious dish for the whole family!
Ingredients (4 pers):
Fish
- 1 lb cod fillet
- salt and pepper
- 6 tbsp all purpose flour
- 1 egg
- 6 tbsp bread crumbs
- 3 tbsp butter
Danish Remoulade sauce
- 1 tbsp capers
- 1 tbsp carrot
- 1 tbsp red cabbage
- 1 1/2 tbsp dill pickles
- 1 tbsp leek
- 3 tbsp mayonnaise
- 2 tbsp sour cream
- 1 tsp turmeric
- 1 tsp yellow mustard
- 1/2 tsp juice from a lemon
- salt and pepper
Served with
- 1/2 leek
- 1/4 red cabbage
- parsley
- dill
- 1 lemon
- pickles
- 8 slices dark bread
Fish
Cut the fish fillets into four same size pieces. Flavor with salt and pepper on both sides. Take three deep plates and add flour in one of them, egg which should be whisked in the second and bread crumbs into the third plate.
Turn each fish fillet, first in the flour, then in the egg and finally in the bread crumbs. Make sure the fillet is cover all over with each ingredients. Now heat a skillet on medium heat and add the butter. Add the fish fillets into the pan and let them bake for approximately 2 minutes on each side, or until golden brown.
Danish Remoulade sauce
Start with chopping the capers, carrot, red cabbage, pickles and leek really fine. Add them all into a bowl. Add the mayonnaise and the sour cream into the same bowl. Stir it all together. Add the spices; turmeric, mustard, lemon juice, salt and pepper. Taste it to make sure you have a good flavoring. Otherwise add an extra pinch of salt or sugar.
Chop leek, parsley and dill. Slice the lemon and two pickles.
Place the fish, the vegetables and spices onto a plate. Add the Danish remoulade sauce and serve together with a couple of slices of dark bread.
