Grilled chicken with a couscous salad

This is a really easy and quick dinner suggestion that can be prepared with there is not much time for dinner preparation, or even when you have friends coming over for dinner but still doesn’t want to spend to much time for the preparation.

This couscous salad is so good. It is fresh but still filling. Couscous, which is actually a pasta made of semolina and wheat flour, ready in 5 minutes (!). I cook my couscous in salty water (I know many add broth to it). After that, I add olive oil and the additional ingredients I want in the salad to give it the right taste. This couscous salad can be served to any other meat, fish or vegetable dish you prefer.

Ingredients (4 pers.): 

  • 4 organic chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp paprika powder
  • 1/2 tsp curry
  • 1/4 tsp chili powder
  • 1/4 tsp ground cilantro
  • pinch of salt and fresh black pepper

Couscous salad

  • 3 cup water
  • 1/2 tsp salt
  • 1 1/2 cups couscous
  • 4 big tomatoes
  • 1 pack fresh cilantro
  • 1/2 red onion
  • 1 can garbanzo beans
  • 2 tbsp olive oil
  • 1 tsp ground turmeric
  • 1 lime (juice and zest)
  • pinch of salt

Pre heat the oven to 400ºF.

Clean the chicken breasts and place them on an ovenware. Add olive oil, paprika powder, curry, chili powder, cilantro, salt and pepper and make sure all chicken breast are well marinated. Use a thermometer. Stick it in on the thickest part of the breast and grill in the oven until the temperature reach 165ºF. Remember, the chicken will continue to bake until it’s getting but, so take it out a bit earlier if it will be standing a couple of minutes in the ovenware.

When the chicken is in the oven, prepare the salad. Add water and salt into a bigger saucepan. Heat up to boiling point, then take the pan to the side and add the couscous. Stir around and then let it stand in the saucepan with lid on for 5 minutes. Now stir again.

Cut the tomatoes in small cubes, fine whop the cilantro and red onion. Drain the garbanzo (chickpeas) beans. Add the tomatoes, cilantro, onion and beans into the couscous. Add olive oil, turmeric and lime juice and zest. Mix it all together and flavor with a pinch of salt.

Ready to serve. Smaklig måltid!
