Grilled beef and vegetable skewers with carrot tzatziki and parsley

I actually don’t cook skewers that often. But this time I decided to do it, and therefore two different skewers. One with beef “croquettes” with a spicy hint of garlic, chilli and cumin. One vegetable skewer with potatoes, zucchini, tomatoes, onion and pepper.

I thought a Greek tzatziki sauce could be nice to this, but instead of doing it the traditional Greek way, I replaced the cucumber with carrots and made a Scandinavian version of it. 😉 I don’t think you have to kill a tzatziki with garlic, therefore I use only one garlic clove in my recipe.

Ingredients (4 pers):

Beef skewer

  • 1 lb ground beef (85%)
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp parsley
  • 1/2 tsp salt
  • 1 tsp sambal oelek (or other chilli sauce)
  • 1 tbsp tomato paste
  • 1 garlic clove
  • 1 egg
  • 8 skewers

Vegetable skewer

  • 12 mini potatoes
  • 1 zucchini
  • 12 pearl red onions
  • 1 red pepper
  • 12 cherry tomatoes
  • 1 tbsp olive oil
  • salt and pepper
  • 12 skewers

Carrot tzatziki

  • 3 medium size carrots
  • 1 garlic clove
  • 1 tsp parsley
  • 1/2 lemon (peel and juice)
  • 1 tsp honey
  • 1 cup Turkish yoghurt
  • pinch salt
  • pinch black pepper
  • fresh parsley

Beef skewer

If you use wooden skewers, start with placing them in a bowl with water until you are going to use them.

Mix ground beef, cumin, ground paprika, salt, parsley, sambal oelek, tomato paste, pressed garlic and egg in a bowl. Use your hands and form 8 beef croquettes. Stick on skewer through each croquette.

Vegetable skewer

Pre cook the potatoes in salty water, medium heat, for 5-7 minutes. Drain the hot water and let them cool down a bit. Wash all vegetables. Cut the zucchini in 12 pieces and then each piece in half. Peel the pearl red onions, and keep them whole. Cut the red pepper in 12 pieces. Skew one potato, zucchini, onion, pepper, tomato and finish with a zucchini on the skewer. Make all 12 skewers and place them on a plate. Drop some olive oil and flavor with salt and pepper.

Grill the skewer on the grill or in a skillet (add some olive oil) until the meat is done and the vegetables get a nice brown color (5 minutes).

Carrot tzatziki 

Peel and grind the carrots and garlic clove. Place them into a bowl. Add parsley, peel and juice from the lemon, honey and the yoghurt. Mix it all together and flavor with salt and pepper.

Serve with some fresh parsley.
