Strawberry summer salad

I think this salad is the definition of a summer salad! You might have strawberries in all your summer dessert, but try them in a salad which you serve together with e.g. grilled meat, vegetables or fish. So easy to prepare and the red color makes it look so pretty. I use arugula in this salad because the pepper tasting arugula taste so good together with the strawberries.

Ingredients (4 pers):

  • 1 cucumber
  • 1 red onion
  • 8 oz organic strawberries
  • 4 oz organic arugula
  • 4-6 oz Feta cheese
  • black pepper

Dressing

  • 4 tbsp olive oil
  • 3 tbsp lemon juice
  • 1/2 tbsp honey
  • 1 tsp oregano
  • salt and pepper

Start with preparing the dressing. Mix together olive oil, lemon juice, honey, oregano, salt and pepper in small bowl or a glass.

Wash and cut the cucumber in small chunks. Peel and slice the red onion in thin slices. Clean the strawberries and cut them in half or quarters.

Use a salad bowl or plate and mix the washed arugula, cucumber, onion and strawberries together with the dressing. Just break the cheese with your hands into bigger pieces and spread over the salad. Finish with flavoring with some extra salt and pepper.

Serve with grilled meat, vegetables or fish. Or if you have it for lunch, serve with some fresh bread.
