
We preserve a lot in Scandinavia. That is a very traditional way of store our food due to cold and long winters. But is has also given a traditional taste to the Scandinavian cuisine. I remember my mom taking me with her to collect blueberries or strawberries. Most of them we ate fresh, but with some of them we also made jam.
Here is a very simple recipe for a strawberry jam that I have enjoyed on my bread and on my waffles.
Ingredients (1 jar):
- 2 lb organic strawberries
- 1 cup granulated sugar
- 1 vanilla bean
Wash and clip the strawberries. Cut or slices them in small pieces. Add them into a saucepan with a thick ground. Use a knife and scrape the vanilla seeds out from the vanilla bean and add into the pan.
Boil the strawberries for 10-15 minutes on medium heat and stir once in a while. Add the sugar into the pan and let everything cook together for 10 minutes. Don’t forget to stir.
Use a jar with lid which has been heated in boiling water before usage. Pour the jam into the jar and close the lid directly. Store the jar dark and cold and after opening, store it in the refrigerator.
