
Pizza is very common fast food in Scandinavia. But nowadays, a pizza doesn’t mean unhealthy anymore. This pizza is gluten free and the pizza crust is made out of cauliflower. I promise you, even the people who normally say they don’t like cauliflower will love this pizza.
In this recipe is also a home made tomato sauce recipe – so simple but taste so much better than any ready to eat sauce.
Ingredients (4 pers – 1 big pizza):
Gluten free pizza crust
- 1 cauliflower
- 1 egg
- 1 cup grated cheese (I prefer mozzarella)
- 2 tsp dry oregano
- 1 tsp dry paprika powder
- salt and pepper
Tomato sauce
- 14 oz tomatoes (whole or cherry tomato)
- 3 tbs olive oil
- 1-2 garlic cloves
- sea salt, pepper
- 1 tsp granulated sugar
- 1 can whole tomatoes (choose one with good quality)
- 1/2 vegetable broth
Topping
- 1 cup grated mozzarella cheese
- 1 pack air-dried ham
- 1/2 cup black olives (pitted)
- 1/2 bag arugula
- basil
Start with the tomato sauce. Pre heat the oven to 425ºF. Place the tomatoes (cut them in two if they are big) on an oven pan (one with edges). Pour olive oil over the tomatoes, sprinkle salt and sugar over. Peel and slice the garlic cloves and place them in the pan. Bake in the oven for 15 minutes.
Pour the tomato (they are hot!) and the sauce from the pan into a sauce pan. Add the whole tomato from the can and the broth. Mix everything with a hand blender until you get a creamy and smooth sauce. Let it simmer until you are done with the pizza crust.
Lower the oven to 400ºF. Wash the cauliflower and break it into smaller pieces. Place the pieces in a blender and let go until the cauliflower is almost as grated as flour. Heat the grated cauliflower for a couple of minutes on max effect in the microwave. Let cool down and then press the cauliflower flour in a kitchen towel to get the water out. Place the cauliflower flour in a bowl. Add egg, cheese and the spices. Mix until you get a dough. Press the dough out to a circle on an oven tray covered with parchment paper. Bake the pizza crust in the oven for 8 minutes (until it get some color).
Spread the tomato sauce on the whole pizza crust. Add the mozzarella cheese over the tomato sauce. Bake the pizza in the oven for another 5-8 minutes until the cheese has a golden color. Take out the pizza and add the air-dried ham, olives, arugula and basil. Finish with some olive oil.
