
I normally do sweet potatoes fries, which I love. But something that also is really good is baked sweet potatoes. You can’t fail when preparing this, it bakes itself in the oven. I normally serve it together with a green salad, grilled fish/meat/vegetables or just eat it as it is. You don’t have to serve one potato per person, that can be quite a lot as a side dish. Use a spoon and let everyone take as much as they want.
Ingredients (4 pers):
- 4 sweet potatoes
- 4 tsp olive oil
- 4 tsp butter
- 4 tbs creme fraiche
- salt and pepper
- parsley
Pre heat oven to 375ºF. Wash and dry the potatoes. Poke each sweet potato 3-4 times on each side with a fork. Rub each potatoes skin with olive oil and sprinkle with some salt.
Bake the potatoes 50-60 minutes until tender when pierced with a fork. Allow them to cool down 5 minutes before cutting each potatoes in the middle on the above skin with a knife. Open up a bit and add some butter and creme fraiche. Sprinkle with some salt, pepper and parsley.
