
Have you ever tried a vegetarian hot dog? What was the meat replaced with? I got so inspired of a recipe I found in Sweden where the “normal” hot dog was replaced with a carrot. Doesn’t sound as your cup of tea? You have to try this! It’s sooo delicious! And so simple! The carrots get soft and spicy and together with the hot Sriracha mayo, it’s really good. It’s not the last time I am doing this recipe!!
Ingredients (4 pers):
Vegetarian hot dogs
- 8 organic carrots (same size)
- 1 tsp hot paprika powder
- olive oil
- salt and pepper
Sriracha mayo
- 1 cup mayonnaise
- 1 tbs sriracha
- 1/2 lemon (peel)
Pickled red onion

Vegetarian hot dogs
Pre heat the oven to 400ºF. Wash the carrots cut of the edges on both sides. Keep the peel (make sure you have washed off all mud etc). Place the carrots in an ovenware and flavor with olive oil, paprika powder, salt and pepper. Roast the carrots in the oven for approximately 30 minutes until the carrots are soft and get a nice roasted color.
For the Sriracha mayo, mix the mayonnaise, sriracha and lemon peel together in a bowl. Taste it so you get the right taste.
Place the rolls on plate. Cut them half way through. Place the carrot in the cut. Place some pickled onion on the hot dog, then the sriracha mayo before sprinkle with some fresh thyme.
