My mom’s cardamom cake

This is another typical kind of sweet pastry we eat when we enjoy a “fika” in Sweden. It’s a sponge cake which is soft and light.

This cardamom cake has a genuine taste of cardamom and I call it my mom’s recipe, because my mom always has a cardamom cake ready for us when we come home for visit.

Ingredients (1 cake):

  • 2 1/2 cups all purpose flour
  • 2 1/2 tsp baking powder
  • 4/5 cup granulated sugar
  • 1 tbs ground cardamom
  • 7 tbs butter (room temperature)
  • 1 cup whole milk (or low fat milk)

Garnish:

  • 2 tbs pearl sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom

Heat the oven to 400ºF. Butter a 10” springform cake pan with removable bottom. Mix flour, baking powder, sugar and cardamom in a bowl. Add the smooth butter in smaller pieces into the bowl and mix with the dry ingredients. Add the milk and mix together until incorporated and smooth.

Pour the batter into the springform and garnish with pearl sugar, cinnamon and cardamom. Bake the cake in the lower part of the oven for 30-40 minutes. You can stick a baking pin in the middle of the cake to see if it’s ready – no batter on the pin means cake is ready.

Let the cake cool down before cutting in pieces and serving.
