Christmas Almond bites

We have a lot of different kind of Christmas candy and cookies we bake for Christmas in Scandinavia. I have already bake both Gingerbread and Saffron buns (3 times already!). This is an alternative to all the traditional Christmas candies, most often containing a higher amount of sugar. These Almond bites contain sugar and fat, but healthier, coming from dates, almonds and almond butter. If you want, you can dip them in some melted chocolate. Enjoy!

Layer one

  • 1 cup rolled oats
  • 1/3 cup almond butter
  • 3 pitted dates
  • 1/2 tsp vanilla extract

Layer two

  • 1/3 cup roasted salted almonds
  • 8 pitted dates
  • 5 tbsp water
  • 2 tbsp almond butter

Mix all ingredients for the bottom part in a food processor. If the dough is a bit dry, add a table spoon of water. Press the dough into a pan/tin (size depends on preferred thickness of the bites) covered with parchment paper. Place in the refrigerator while preparing layer two.

Mix the almond in a food processor to almond flour. Then add dates, water and almond butter and mix it all together. Spread the second layer over the first layer. Place the pan with the layers in the fridge for an hour. Then take is out and after 5-10 minutes, cut into preferred sized bites. The bites that are not eaten directly, keep them in the fridge and take out half an hour before serving.
