Energy bites with pistachio and cardamom

I have a new favorite – these small, delicious and healthy energy bites. It’s not only my new favorite snack, it’s also my 14.5 months old daughter’s new favorite snack. Perfect! I just say, you have to try this recipe. I cannot just eat one….

They are ready in less than 15 minutes!

Ingredients (12-15 bites): 

  • 10 pitted dates
  • 4 dried apricots
  • 1 tbsp coconut oil
  • 1/2 tsp ground cardamom (or other preferred spice like cinnamon, vanilla extract, chilli)
  • 1 cup chopped nuts (I used almonds and pistachio with a pinch of sea salt)

Garnish

  • 2 tbsp cocoa powder
  • 2 coconut flakes

Start to pit the dates and place them in a food processor bowl (fresh dates need to be placed in a bowl with water to get soft before being mixed. Drain the water before adding dates to the recipe). Add the apricots and cardamom. Mix with high power until it gets a sticky dough almost. Add the coconut oil into the bowl. Chop the nuts roughly and add into the bowl. Mix again in the food processor with medium power for a couple of minutes.

Use a spoon and take approximately two teaspoons with dough for each ball and form into a ball. Do the same procedure with the rest of the dough.

Roll each energy bit in either coconut flakes or cocoa powder or leave them as they are.

The ones that are not eaten directly, keep them in the refrigerator.

  1. Like to start making the energy bites before even finish reading the recipe but don’t have all the ingrediens at home and will have to wait for a few days! 😊🙁
