Tomato, mozarella & basil salad

The basil in my garden is growing and growing. I have so much basil and try to eat some basil every day. 😉 I have one sort that has a bit of anise taste. Do you know which sort that is? I also have traditional basil, which I have use in this salad. This is my absolutely favorite side dish during the summer months. It is so easy to prepare, few ingredients and when you use quality ingredients; this salad is just amazing.

Ingredients (4 pers. side dish):

  • 4-6 organic tomatoes
  • 2 fresh buffalo mozzarellas or 8oz fresh mini mozzarellas
  • a bunch of fresh basil
  • 2 tbsp quality olive oil
  • pinch of sea salt
  • 1/4 tsp fresh black pepper

Wash and cut the tomatoes into small cubes. If you have mini mozzarella, leave them whole and if big mozzarella, cut them into small cubes as well. Chop the fresh basil and add all three ingredients into a serving bowl. Add the olive oil and carefully use a big spoon to get the oil covered on all ingredients. Finish with salt and pepper. Serve with some extra fresh basil on top.

Perfect to grilled vegetable, meat or fish.

  1. Hi Anette, What a beautiful summer salad, will make this for midsummer for sure!
    Have lots of purple basil in the garden and just got a plant with licorice (anise) flavor? (Siam Queen)
