
When I talked to my mom on the phone the other day, she told me that she had just baked some “Hallonsnittar” or Raspberry cookies. I got really inspired and baked some myself. This is a traditional Swedish cookie, that my Grandma also baked very often. I found a blackberry jam at home, so this is a blackberry cookie.
Ingredients (60 cookies):
- 9 oz butter
- 2/3 cup granulated sugar
- 2 eggs
- 2 1/2 cups all purpose flour
- 1 tsp baking powder
Filling
- 5 tbsp blackberry jam
Glaze
- 1 1/2 cup confectioner’s sugar
- 1 tbsp water
Pre heat the oven to 350ºF.
Mix butter and sugar in a bowl. Add the eggs, one by one. Mix the flour with the baking powder before adding into the butter and egg mixture. Mix until the dough is well mixed together and is easy to shape.
Divide the dough into four equal parts. Roll out to four 15” long rolls. Place the four rolls on an oven tray covered with parchment paper. Form a hollow in the middle of the rolls where the jam will be placed. Use a spoon and place a thin layer of the jam in the middle (in the hollow) on each dough roll.
Bake in the oven for approximately 15 minutes.
Mix confectioner’s sugar and water together (add more water if the glazing gets too thick). Spread it over the warm cookies. Cut them in 1 inch diagonal cookies.
