Veggie bowl

Here is a vegetarian bowl with my favorite vegetables. This is a quick dinner where you can use the vegetables you have at home. I start the bowl with tricolor quinoa and fill it with oven-baked vegetables and fresh cilantro. This time I had the following at home; peppers, mushrooms, zucchini, and leek. So simple and delicious!

Ingredients (4 pers.):

  • 1 cup quinoa + 2 cups water
  • 1 zucchini
  • 1 leek
  • 2 peppers
  • 10 mushrooms
  • 2-3 tbsp olive oil
  • 1 tsp oregano
  • pinch of salt
  • fresh black pepper
  • 1/2 tsp sesame seeds
  • 1 bundle fresh cilantro

Start with preparing the quinoa according to the instruction on the packaging.

Pre heat the oven to 400ºF.

Wash and cut the zucchini in half slices, leek in thin slices, peppers in long slices and mushrooms in slices. Place them all separated on an oven tray covered with parchment paper. Pour and spread the olive oil over all vegetables. Flavor with oregano, salt and black pepper. Bake the vegetables in the oven for 20-30 minutes until they all are cooked and start to get some color.

Use portion bowl and add first the quinoa and then each vegetables. Flavor each bowl with fresh cilantro and sesame seeds. Add some oven the olive oil from the oven tray over the dish.
