Mini muffin with banana and dark chocolate

This mini muffin is baked without any white sugar and butter. I have replaced the white sugar with bananas. Therefore, I think we can call these muffins healthy muffins. Wouldn’t you do that when you hear ingredients such as bananas, rolled oats, dark chocolate? 🙂 If you need a small little snack in the afternoon, take a little healthy and delicious mini muffin. They are ready in less than 30 minutes!

Ingredients (30-35 muffins): 

  • 2 bananas
  • 3 eggs
  • 1/2 cup rolled oats
  • 1/2 cup all purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 75g dark chocolate (70%)

Pre heat the oven to 375ºF.

Mash the bananas in a bowl with a fork. Add the eggs and whisk together with the bananas.

Mix rolled oats, flour, cinnamon, salt and baking powder in a separate bowl. Then add that into the bowl with the banana and egg mixture. Add the vanilla extract and milk and mix everything together with a spatula. Last, add the chopped chocolate and bend around in the batter.

Pour the batter into mini muffin pan. Fill each muffin almost to the top. Bake them in the oven for 12-15 minutes until they are getting some nice color.

Take them out and let them cool down a grid.
