
This is a simple but perfect family dinner. The pita bread you can prepare and bake the day before (or buy). The filling you can variate, but I decided to make vegetarian quinoa burgers which are sooo good! Try it out and let me know what you (and the kids) think.
Ingredients (4 pers):
Pita bread
Quinoa burgers
- 1 1/2 cup quinoa
- 10 sun dried tomatoes
- 2 green onions
- 2 eggs
- 7 oz Feta cheese
- fresh black pepper
- (3 tbsp almond flour)
- 3 tbsp butter
Sriracha mayo
- 3 tbsp mayonnaise
- 5 tbsp sour cream
- 1 1/2 tsp sriracha (depending on how spicy you want it)
Others
- 1/2 cucumber
- 1 romaine lettuce
- 1 avocado
Start with preparing the quinoa according to the packaging. Cut the dried tomatoes, the green onions and add into a bowl. Add the ready quinoa and mix together. Add two eggs and the Feta cheese and flavor with fresh black pepper. If you now have a mixture that don’t seems to get together, add some almond flour to get a batter that sticks together.
Shape 8 burgers with your hands. Heat a skillet with some butter. Fry the burgers on both sides until you get a golden and crispy crust.
Prepare the Sriracha mayo by adding the mayonnaise und the sour cream into a small bowl. Add the sriracha and stir.
Heat your breads shortly in the oven.
Open your pita bread on one side. Fill with romaine lettuce, sliced cucumber and sliced avocado. Cut the burgers in half and place one burger into your pita bread. Finish with adding the sriracha mayo.
