Healthy squares with coconut and cocoa topping

I found a very inspiring recipe in a magazine when I was in Sweden a couple of weeks ago. I just had to try it out after coming back to USA, with the ingredients that I could find here. Result, sooo good! These healthy squares taste so good that you easily forget that they are healthy, that’s just a plus. But watch out, it’s hard to stop eating them. 😉

Ingredients (24 squares):

  • 1/2 cup unsweetened coconut flakes
  • 1/3 cup sunflower seeds
  • 1/3 cup pepitas (or pumpkin seeds)
  • 20 organic dates
  • 1/2 tsp vanilla extract (can be excluded)
  • pinch of salt

Chocolate topping

  • 1/3 cup coconut oil
  • 2 tbsp cocoa powder
  • 2 tbsp maple syrup
  • pinch of sea salt

Add the coconut flakes, sunflower seeds, Pepitas, dates (pitted), vanilla extract and salt into a food processor bowl. Mix everything together for at least 1 minute. It should almost be like a dough when you are done.

Use a bread pan. Cover the inner pan with plastic wrap (this will help you when you take the dough out later). Add the seed dough into the pan by using your hands. Press it out in the pan to a clean thickness.

Prepare the topping by melting the coconut oil. This can be done by heating it in the microwave for some seconds. Add coconut oil and cocoa powder into a bowl and mix it together. Flavour with the maple syrup.

Spread the topping over the dough in the bread pan.

Place it in the freezer for at least 15 minutes. Take it out, lift it out of the bread pan with the help from the plastic wrap. Cut into 24 equal sized squares. Sprinkle some sea salt over each piece.

Keep cold until serving. Smaklig måltid!
