
Quiche is so easy made and the variation is unlimited. If you prepare gluten free, vegetarian or with meat, it’s up to you. Today I decided to make a quiche with spicy sausage, zucchini, tomatoes and buffalo mozzarella and the result is just SO good!
What do you normally have in your quiche?
Ingredients (1 quiche):
Dough:
- 1 1/4 cup all purpose flour (or use gluten free alternative)
- 8 1/2 tbs butter (room temperature)
- 1 tbs water
- 1 tsp salt
Filling:
- 3 eggs
- 1 2/3 cup whole milk (or low fat milk)
- 1 tsp salt
- 1 tsp chives
- 3 spicy sausages
- 1/2 leek
- 1 zucchini (half fry, half deco)
- 10 cherry tomatoes
- 1 buffalo mozzarella
Start with preparing the dough. Pinch the butter and the flour together in a bowl with your fingers. When it’s almost got together, add the salt and the water and and continue to pinch until you have a dough. Let it dough rest while preparing the filling.
Whisk together eggs, milk, cut chives and salt in a bowl.
Wash and cut the leek and zucchini into slices. Take half of the amount of zucchini slices to the side and use for decoration later. Cut the sausage into slices. Fry the leek, half amount zucchini and sausages in a pan with a bit of olive oil until it has a got a nice color. Put to the side.
Cut the tomatoes and mozzarella in slices.
Roll the dough out and place in a pie tin. Make sure the sides are fully covered. Dip carefully with a fork on the dough over the whole bottom (to avoid that it splits later).
Place the pie tin in a pre heated oven of 425ºF for 10 minutes. Take the dough out again and start with the filling. Add the fried sausage, leek and zucchini. Our over the egg mixture and decorate your quiche with the rest of the zucchini, the mozzarella and the tomatoes.
Place again in the oven and bake for approximately 30 minutes until the quiche has a nice color.
Serve with rocket salad or other green salad.
