Tomato bread

Tomato bread is a perfect match to a fresh green salad or your barbecue favourites. Tomato and oregano makes it remind me about pizza, but in bread form. Try it!

Ingredients (2 loaves):

  • 1 can whole tomatoes
  • 1/5 cup water
  • 1 pack dry yeast
  • 2 tsp salt
  • 1/2 tbs olive oil
  • 1 tsp dried oregano
  • 4 1/2 cup strong white bread flour

Cut the tomatoes into smaller pieces while still in the can before pouring into a bowl. Add the water, salt, olive oil and oregano into the bowl. Mix the yeast with the flour before adding into the bowl. The dough should only just stick together and be smooth – no more work necessary. Cover and leave the dough to prove for 1 hour. Meanwhile, heat the oven to 425ºF.

Scarped the dough out on a floured bread board. Divide the dough in two and shape into small chubby loaves. Place the loaves in an oven tray covered with parchment paper. Brush with water and sprinkle over a little oregano before baking immediately for 30-40 minutes. Leave the loaves to cool on a rack without covering.
