Love treats (Kärleksmums)

This Swedish traditional cake is called “Kärleksmums” which I chose to translate with Love treats but could also be Love cakes, Choco-coco squares or Love yums. 🙂 It may look like a chocolate brownie with chocolate icing and coconut flakes, but it is much lighter and fluffier than a brownie. Try it!

Ingredients (approximately 24 pieces):

  • 8 oz (227g) butter
  • 4/5 cup whole milk (or low fat milk)
  • 5 eggs
  • 1 2/3 cups granulated sugar
  • 1 1/2 tbs vanilla sugar
  • 1/2 cup cocoa powder
  • 3 tsp baking powder
  • 2 1/2 cups all purpose flour

Chocolate icing

  • 5 tbs butter
  • 1/2 cup strong coffee
  • 1/5 cup cocoa powder
  • 1 1/2 tbs vanilla sugar
  • 2 1/2 cups confectioners’ sugar

Topping

  • 1 cup coconut flakes (unsweetened shredded coconut)

Heat the oven to 350ºF. Melt the butter in a saucepan on low heat. Add the milk into the melted butter and let it cool down.

Whisk the eggs and sugar together until light and airy – 2 or 3 minutes on maximum speed using an electric whisk. Sift and add the vanilla sugar, cocoa powder, baking powder and flour into the egg and sugar mixture. Now mix carefully everything together to a smooth dough. Add the butter and milk mixture and continue to carefully mix it together. Pour the mixture on an oven pan (approximately 12x16in) covered with parchment paper. Bake for approximately 30 minutes in the oven. Let the cake cold down.

Melt the butter for the chocolate icing. Add the coffee into the smelted butter. Then add the cocoa powder, vanilla sugar and confectioners’ sugar into the butter and coffee. Stir until smooth and let it cold down until the icing is getting thick. Pour it over the cold cake. Finish with sprinkle the coconut flakes over the cake. Cut the cake in 24 pieces. Ready to serve!
