Strawberry cake

Me and my family went strawberry picking yesterday. This reminded me about my childhood, when my older sister and my mom went strawberry picking. The went to this strawberry farm, not far from our summer house, every summer to help the owner to get their strawberries picked and thereafter sold. I don’t know if I was too young to come with them, or if I was a better sales person than a strawberry picker. But I was the one who was sitting on our street with a lot of strawberry boxes trying to sell them (except for them we ate ourself) to the bypassing neighbours. That is a wonderful memory!

This time, I had my 14 months daughter with me for strawberry picking. I could she how much she loved walking around helping me putting the strawberries in a bucket. We came home with 10 lb strawberries. 🙂 The first thing we did (after had eaten a lot of them) was to bake a strawberry cake. This cake is really easy to prepare, few ingredients and the texture gets a bit like meringue – chewy and soft with a crisp exterior.

Ingredients (1 cake):

  • 1 egg
  • 2/3 cup granulated sugar
  • 2/3 cup all purpose flour
  • 3 1/2 tbsp butter
  • 20 strawberries
  • 1 tbsp confectioner’s sugar

Pre heat the oven to 400ºF. Whisk egg and sugar in a bowl with an electric hand mixer until the mixture gets white and fluffy. Melt the butter in a sauce pan on medium heat. Add the flour and melted butter into the egg mixture and carefully mix it all together.

Use a bread pan (50 fl oz) and cover it with parchment paper. Add the batter into the bread pan. Add the washed strawberries 2 x 10 along the pan (cut the strawberries in two if they are big).

Bake the cake in the oven for 30-35 minutes or until the cake get a golden color. Let the cake cool down in the pan. Then move it from the pan by lifting the parchment paper. Powder some confectioner’s sugar of the cake. Serve it like it is or together with vanilla sauce or vanilla ice cream.

    Thanks for sharing your Strawberry picking day experience and that also reminds me about my childhood. I’m so happy to see more of your new recipes again…
    The strawberry cake looks just wonderful and I will have to try this week. Looks very delicious!
    We went blueberry picking last month and I though the strawberry season already ended.
    I would like to pick too perhaps there is still a chance. Do you have a the name of the farm?

    1. Hi Ann! Thank you for your lovely comment. We went to Bradford county and the farm is called Sweet berries of Crawford. They are still open, but check their Facebook page before heading there.
