Veggie bean burger with guacamole

This is my absolutely favorite veggie burger recipe – with black beans. I guess black beans can scare many of you away thinking “what healthy burger is that?” or “I’m not a bean fan”. But I tell you, the beans are the key to success here. They give the prefect texture, fullness but also the taste together with the other ingredients. I pre roast the black beans in the oven before mixing them with the other ingredients. This is to get the perfect texture. Also, don’t mash them, just carefully press them with a fork to keep some of the chunkiness.

Ingredients (4 pers.):

Burger

  • 14 oz black beans
  • 1 tbsp olive oil
  • 1/2 yellow onion
  • 3 garlic cloves
  • 1 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/2 cup bread crumbs (or oat flour)
  • 1/2 cup feta cheese
  • 2 eggs
  • 1 tbsp Worcestershire sauce
  • 1/3 cup pumkin seeds
  • pinch of salt and black pepper

Guacamole 

  • 2 avocados
  • 1 garlic clove
  • 1 tomato
  • 1/4 red onion
  • 1 lime (juice)
  • pinch of salt and fresh black pepper

Other

  • 4-8 Brioche buns
  • lettuce
  • 8 slices cheese
  • 4 tbsp bbq sauce
  • 1 big tomato

Burger

Pre heat the oven to 325ºF. Spread the beans onto an oven tray covered with parchment paper. Bake in the oven for approximately 15 minutes until slightly dried out.

Meanwhile, santé chopped onion and garlic in olive oil in a skillet over medium heat until the onion is soft.

Add the heated onion and garlic into a food processor. Add also cumin, chilli powder, garlic powder, smoked paprika, bread crumbs, feta cheese, eggs, Worcestershire sauce and pumpkin seeds. Pulse everything together, then add the black beans. Pulse the food processor shortly, leaving some larger chunks of beans. Flavor with salt and pepper.

Pre heat the oven to 375ºF.

Form the mixture into burgers by using your hands, approximately 1/3 cup of mixture for each burger. Place them on an oven tray covered with parchments paper. Bake for 10 minutes, then use a turner to turn each burger around. Bake for another 10 minutes. (You can also fry the burgers in a skillet with some butter, approximately 4-5 minutes on each side on medium heat).

Guacamole 

Take the avocados out from the peel and mash them with a fork. Peel and then press a garlic clove into the avocado (using a garlic press). Wash the tomato and take out the middle part of the tomato (it’s too much water in that part). Cut the tomato in small pieces. Peel and cut the red onion in really small pieces. Add into the avocado mash. Pour the lime juice over and flavour with salt and black pepper.

Build the burger with lettuce, guacamole, burger, cheese, bbq sauce, tomato and finish with more guacamole. Ready to serve!
