Ciabatta

Do you want a quick and easy bread served together with your next dinner? A bread that is light and a bit chewy, just like a ciabatta should be? Here is my recipe for a delicious and light ciabatta bread.

Ingredients (6 bigger bread buns):

  • 2 cups unbleached all purpose flour, wheat or bread flour
  • 2 tsp active yeast
  • 1/2 tsp salt
  • 1 1/4 cup water
  • 4 tbsp sour cream
  • 2 tbsp olive oil + some extra oil for the spatula

Mix the flour, yeast and salt together in a bowl. Mix together water heated to 98ºF water with sour cream and oil in a sauce pan. Pour the fluid into the bowl with the flour mixture and stir with a wooden spoon until it all get together to a sticky dough.

Cover an oven tray with parchment paper. Divide the dough in six pieces and place on the parchment paper. Use a spatula with some oil on and spread out each dough piece to a small rectangle. Ferment the six breads for 1 hour covered with plastic wrap (oil the inside before covering).

Spread some oil on the spatula again and fold each bread back to a rectangle. Let them ferment for another 30 minutes under the plastic wrap.

Pre heat the oven to 475ºF.

Bake the breads in the oven for approximately 20 minutes or until golden brown. Let them cool down on an oven grid.
