
This Scandinavian cookie just melt on your tongue. It is called a dream and it must be because it feels like a dream when you eat it. So good! We use baker’s ammonia instead of baking powder in these cookies. It is also the baker’s ammonia that make them stay crispy and at the same time not melt out too much while baking. The smell that comes when the cookies are in the oven can be new to you if you haven’t baked with baker’s ammonia before, but that is nothing to be afraid of. I ordered my baker’s ammonia via amazon. If you prefer using baking powder instead, you can. Then you have to use double amount of the baker’s ammonia.
Ingredients (30-40 cookies):
- 2/3 cup sunflower oil
- 3 1/2 tbsp psyllium fiber
- 10 tbsp butter
- 1 2/3 cups fine granulated sugar
- 1 1/2 tbsp vanilla extract
- 1 tsp baker’s ammonia
- 2 cups all purpose flour
Mix sunflower oil and psyllium fiber in a bowl and let it swell for 10 minutes.
Meanwhile, mix butter and sugar together by using your hands (avoid a hand mixer). Mix until the batter is white and airy.
Mix vanilla extract, baker’s ammonia and flour in a bowl. Then add that into the sugar and butter mixture. Add the oil mixture and mix it together carefully.
Shape small balls (1 tbsp) of the dough and keep them all cold for approximately 15 minutes.
Pre heat the oven to 300ºF. Place the balls on an oven tray covered with parchment paper. Push on the top of each ball with your fingers to make it a bit flat. Bake in the oven for approximately 15-20 minutes.
