
Pasta with pesto is something I ate a lot for lunch when I went to the university. It was an easy and quick way to get a delicious meal and have more time for studying. I can tell that I then often bought my pesto. But it’s actually very easy to make yourself.
Today I have made a new kind of pesto. This pesto is made out of broccoli instead of basil leaves which I think makes it both more crunchy and filling. A simple and quick dish with only 5 ingredients. Try it!
Ingredients (4 pers):
- 1 broccoli head (250g)
- 1/3 cup peeled pistachio
- 3 1/2 tbsp grated parmesan cheese
- 1 tbsp olive oil
- pinch of fresh ground black pepper
- pasta for 4 persons (I have used Farfelle pasta)
Neaten the broccoli and cut it in smaller pieces. Boil the broccoli pieces in salty water on medium heat until they get a bit soft (5-7 minutes). Drain all water .
Add the broccoli, peeled pistachios and grated parmesan cheese into a food processor bowl. Mix quickly so you keep some crunch. Add the oil and black pepper and mix together.
Boil the pasta according to the packaging. Wash quickly in cold water. Add the pasta back in the sauce pan. Add the broccoli pesto into the pan and mix it all together while shortly heating it.
Serve with fresh basil leaves, drops of olive oil and grated parmesan cheese.
