We all know the Spanish classical Gazpacho. This red, spicy, cold soup which is perfect to serve a warm summer day. But have you tried to make it yellow? I did, and it’s delicious! What I used was yellow cherry tomatoes, yellow paprika, yellow peaches and to make sure it gets yellow – the super healthy turmeric. The peaches give the soup a bit of a sweetness, but together with the hot chilli and spicy garlic, this make the perfect combination a hot summer day.
Ingredients (4 pers):
- 16 oz yellow cherry tomatoes
- 3 yellow peaches
- 1 yellow pepper
- 1 garlic clove
- 1/2 tsp ground turmeric
- 1 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 lime
- salt, pepper
- 1 tbsp sunflower seeds
- chilli, fresh parsley
Use a food processor. Add the washed cherry tomatoes, washed and sliced peaches, washed and sliced pepper and a pressed garlic glove into the food processor bowl. Mix until the texture gets really smooth. Use a strainer and drain the soup through to get an even smoother texture.
Now add the spices; turmeric, olive oil, vinegar, juice from half of the lime and stir it all together. Taste it and add the amount of salt and pepper that is needed.
Serve in small bowl plates or wide glasses so you can see the beautiful color. Start with adding an ice cube into the bowl (to keep the soup really cold). Add the soup and decorate and finish with small pieces of one cherry tomato, sunflower seeds, fine chopped chilli, some olive oil, pepper and fresh parsley.
