Whole wild salmon with dill sauce

Salmon is a very common fish in Scandinavia. Here in Florida, I try to eat fish after season. The assortment here is much wider than in Scandinavia.

When buying salmon, I always try to buy wild salmon. I can not prove how much better it is to buy wild vs farmed salmon, but all information I have read is saying the same thing. When it comes to farmed salmon, the crowded conditions of most farms can cause contamination. Secondly, the farms have been accused of polluting the oceans, fostering disease, and spreading sea lice.

So now when I did this typical Scandinavian salmon dish, I used wild salmon. The dill sauce also makes this dish typical Swedish.

Ingredients (4 pers):

  • 1.5 lb whole wild salmon
  • 1 tbs olive oil
  • 1 tsp black and white sesame seeds
  • chili flakes
  • salt and pepper
  • 1 lemon
  • fresh dill

Dill sauce

  • 1 1/2 tbs butter
  • 1 1/2 tbs all purpose flour
  • 1 cup whole milk
  • 1/2 lemon (juice)
  • 2 tbs chopped fresh dill
  • salt and pepper

Hot vegetables

  • 1 zucchini
  • 1 red pepper
  • olive oil, salt, pepper

Green salad

  • 6 oz organic baby spinach
  • 10 oz cherry tomatoes
  • 1/2 cucumber
  • 1 1/2 tbs olive oil
  • 1 tbs vinegar
  • salt and pepper

Pre heat the oven to 400ºF. Place the salmon with skin down on an oven tray covered with parchment paper. Pour the olive oil over the fish. Sprinkle the sesame seeds, chilli flakes, salt and pepper over the fish. Cut the lemon in slices and place over the fish. Place in the oven for approximately 20 minutes. The fish is ready when you can use a fork and easily pull it apart. Add some fresh dill.

Cut the zucchini and red paprika in slices. Fry them shortly in olive oil in a pan. Flavor with some salt and pepper.

Melt the butter for the sauce in a sauce pan. Take it off the stove plate and add the flour. Mix it together. Add the milk and place it back on the stove plate but on low effect and continue to stir. The sauce should now start to get thicker. When it has the thickness you wish for, add the lemon juice, dill and some salt and pepper.

Finish making the green salad. Add all ingredients in a salad bowl and mix quickly.
