
One pot pasta is ideal for a casual family dinner. This is SO simple to prepare. Look at the instructions below, it’s so short text because it’s so simple. 🙂 Again, you can use what ingredients you have at home or what you like most. I have done this recipe vegetarian, but you could add chicken (quickly fry or boil the chicken pieces first) or pieces of sausage e.g. chorizo. To not let the pasta getting over cooked, make sure you use a pasta that has a minimum 10 minutes cooking time and not less.
Ingredients (4 pers):
- 8-9 oz pasta (I used organic tagliatelle)
- 8 oz whole white mushrooms
- 1 pint cherry tomatoes
- 1 onion
- 2 garlic cloves
- 4 oz fresh spinach
- 1 head of broccoli
- 1 pot fresh basil (leave some for garnish)
- 2 cubes vegetable broth
- 4 cups water
- chili flakes, salt, pepper, oregano
- 8 oz fresh mini mozzarella
Start with preparing the vegetables. Peel the onion and garlic cloves and cut in small pieces. Clean and cut each mushroom in four pieces. Wash the broccoli and pull into smaller pieces. Cut the cherry tomatoes in half if you prefer.
Put all the ingredients in a big pot, except for the mozzarella. Let is boil together for approximately 10 minutes – until the pasta is ready. If you still have too much water in the pot, just take some the water out. Stir everything together. It should have cooked well together. Garnish the pot with mini mozzarella (pull it into smaller pieces) and basil and serve the dish directly from the pot.
