Chicken bites with potato wedges and curry dip

Chicken bites are something for the whole family or can be served as a snack/finger food at a party. Use organic chicken and flavor them as you prefer. Goodbye all bad chicken nuggets that are dripping fry oil. These, fried but not deep fried, crispy chicken bites are served with crispy potato wedges and a simple curry dip. What do you think?

Ingredients (4 pers):

  • 4 organic chicken fillet
  • 1 cup all purpose flour
  • 2 eggs
  • 1 cup Panko crumbs
  • 4 tbsp butter
  • 12 potatoes
  • 2 tbsp olive oil
  • salt
  • 1 romaine lettuce
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tsp curry

Pre heat the oven to 425ºF.

Clean and slice the chicken in bite sizes. Take three place and place flour on one plate, whisked eggs on one and Panko crumbs on the third plate. Bread the chicken first in flour, then in egg and last in Panko crumbs.

Wash and cut the potatoes in wedges. Place them all in an ovenware. Pour over the olive oil and flavor with salt. Bake in the oven for approximately 40 minutes or until the wedges get a nice golden color.

Heat a skillet with butter on medium heat. Fry the chicken pieces on each side in the skillet until golden brown.

Mix sour cream, mayonnaise and curry together in a bowl. Serve as a dip sauce. Serve the dish together with fresh green romaine lettuces.
