
Scallops is something I don’t want to prepare more than needed. I want to keep them as close to fresh scallops as possible, even when cooking them. I want a touch of heat on them, but not more than that. That can be difficult, but just watch them carefully in the skillet (grill) and you should get the perfect fried outside and still not dry inside.
This recipe gives a small touch of Asian flavors to it with soy, ginger, sesame, ginger and green onion.
Ingredients (appetizer – 4 pers):
- 12 fresh scallops
- 1/3 cup soy sauce
- 3 tbsp olive oil
- 2 tbsp grated fresh ginger
- 4 tbsp sesame seeds
- 4-5 green onions
- 1 garlic clove
- 1/2 tbsp olive oil
- 1 tbsp butter
Make the dressing by mixing soy sauce, olive oil and ginger in a bowl.
Use a skillet to roast the sesame seeds for a couple of minutes (no oil needed). Remove the seeds from the skillet and place on a plate. Roll the scallops in the roasted sesame seeds.
Wash and slice the green onion in thin slices. Peel and slice the garlic clove. Add oil into the skillet and sauté the onion and garlic.
Add butter into a skillet and fry the sesame covered scallops for approximately 30 seconds on each side on high heat.
Serve the scallops with the sautéed onions and add the dressing on the onions.
