Fried cod with crispy smashed potatoes and creamy caviar sauce

Another fish meal. 😉 I just keep them coming because I love them. This is a twisted potato to it – a crispy smashed potato. That means, I boil them for 10minutes, then I smashed them with a wooden spoon, place them on an oven tray and roast them in the oven with olive oil, some garlic, salt and whatever herbs you prefer. This is so good!

Ingredients (4 pers.):

  • 1.6lb fresh white fish (here cod but can be halibut, mahi, haddock)
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • pinch of fresh black pepper
  • 1 1/2 cup Panko bread crumbs
  • 2 eggs
  • 3 tbsp canola oil
  • 3 tbsp butter

Crispy smashed potatoes

  • 10-15 organic potatoes (depending on size)
  • 1 tsp salt + pinch of salt
  • 3 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp thyme/basil/rosemary

Creamy caviar sauce

  • 1 cup sour cream
  • 3 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh dill
  • 1 1/2 tbsp caviar

Other

  • 1 lemon
  • fresh dill

Wash the organic potatoes and boil them in a big sauce pan with salty water for approximately 10-15 minutes on medium heat. They should not be soft. Pre heat the oven to 420ºF. Place them potatoes on an oven tray covered with parchment paper. Add olive oil, salt, peeled whole garlic cloves and herbs. Mix it all around is all potatoes are covered in oil. Now, use a bigger wooden spoon or something hard to carefully (you don’t want the potatoes to fully crash) smash each and every potatoes. They should still stay in one piece. Place the oven tray in the oven and bake for approximately 15 minutes or until they start to get a nice color.

Mix the ingredients for the creamy caviar sauce together a bowl; sour cream, mayonnaise, lemon juice, fresh chopped dill and caviar. Please it in the refrigerator until all dishes are ready.

Cut the fish in portion sizes. Mix flour, salt and black pepper on a plate. Whisk the eggs in a bowl. Place the Panko crumbs on a separate plate.

Turn the fish pieces in first flour, then the egg and then last the Panko crumbs.

Heat the skillet with butter and oil on medium heat. Fry the fish approximately 3 minutes on each side until a nice golden color. Be careful so the pan doesn’t get too hot.

Serve the fish with the crispy smashed potatoes, creamy caviar sauce and fresh lemon and fresh dill.

    Thanks for all the great fish recipes! We had a neighbor that just came back from a fishing trip in Anchorage Alaska and we got some really fresh halibut.
    The smashed potatoes are so easy and yummy and already a favorite.
