Home made meringue is so easy to make and deeeelicious. I like to make them quite big and rather cross them into smaller pieces. The bigger ones look better and they get this great texture with a hard, shaky outside and a chewy inside. I love to flavor the meringues and this time half of them where flavored with cocoa powder.
Ingredients (4 pers.):
- 2 egg whites
- 1 cup granulated sugar
- 1/2 juice from a lemon
- 10 strawberries
- 20 blueberries
- 8 scoops of vanilla ice cream
- 1 Daim chocolate
Pre heat the oven to 250ºF.
Mix egg whites (make sure there is no egg yolk and no oil or fat in the bowl being used) and a third of the sugar in a bowl with a hand mixer on medium speed. Mix until the mixture starts to get white. Add the rest of the sugar and the lemon juice. Continue to mix with the hand mixer now with high speed until the meringue gets thick. Turn off the hand mixer and when it is lift upwards, the meringue should get the shape of a small cone and stay like that and not fall down. The meringue is then mixed enough.
Use an oven tray and cover it with parchment paper. Use a spoon and add the meringue onto the oven tray, form the shape and the size that is wanted.
Bake in the oven for approximately 45-50 minutes depending on the size of the meringue. If chewy meringues are preferable, take them out a bit earlier.
Let the meringues cool down.
Use four dessert bowls and add the ice cream, sliced strawberries, blueberries, one crossed meringues and one whole meringue and garnish with crossed Daim chocolate.
