Danish peppernuts (Pebernødder)

Baking is part of the count down for Christmas. From what I have understood, this is part of most of our cultures in the world. I had my Danish friend over for Christmas preparation the other day and she taught me how to bake the best Danish Christmas cookies “Pebernødder”. They remind me of the Swedish “Pepparkakor”, but they are small so you can eat even more of them. 😉

Ingredients (30-40 peppernuts):

  • 9 oz butter (room temperature)
  • 1 1/3 cup granulated sugar
  • 1/3 cup heavy cream
  • 1/2 tsp ground nutmeg
  • 1 tsp ground allspice
  • 1/2 ground black pepper
  • 1 tsp ground ginger
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 4 1/2 cups all purpose flour

Pre heat the oven to 400ºF.

Use an electric hand mixer and mix butter and sugar together until airy. Add the cream into the airy butter and sugar mixture and mix it together.

Add nutmeg, allspice, black pepper, ginger, cinnamon, baking powder, baking soda and flour into a bowl. Mix it all together. Add the flour mixture into the butter mixture and mix it all together. Use your hands when mixing, until you get a shiny dough.

Roll the dough out to rolls that are as thick as a normal finger. Cut the rolls in 1/2 inch big pieces. Place each piece on an oven tray covered with parchment paper.

Bake in the oven for 6-8 minutes. Let the cookies cool down.
