This is my new favorite side dish! So simple and so good!
Ingredients (4 pers):
- 1 lb potatoes
- 15 oz chickpeas
- 3 tbs olive oil
- salt and pepper
Pre heat the oven to 425ºF. Wash the potatoes but if possible, keep the peel which make them more crispy. Cut the potatoes in same size slices. Place them all on an oven tray covered with parchment paper. Wash the chickpeas before adding them on the tray together with the potatoes. Pour over the olive oil and flavor with salt and pepper. Mix it all on the tray until every piece get some flavoring.
Bake the potatoes and chickpeas for 25 minutes until you get the perfect grilled and crispy surface.
Serve with e.g. meat and/or a fresh green salad.
