I guess many of you already heard about the basic concept of nice cream – the name for something that reminds us of ice cream but with healthy ingredients. In my recipe below I have made it really simple using frozen bananas. Nice cream is the perfect summer snack when you want something healthy instead of ice cream. And it’s TWO ingredients, so simple! There is no limit when it comes to flavors. I have used cocoa power in one and pineapple in one in the recipes below. But you can also try with e.g. raspberry, blueberry, mango, strawberry, peanut butter, vanilla bean, chocolate, coconut, dates or avocado…
Ingredients (4 pers):
- 4-6 bananas
- 1/2 cup almond milk / oat milk /coconut milk
- 1-2 tbs cocoa powder
- 1/2 fresh or frozen pineapple
- chocolate pieces and chopped almonds
Use bananas that are ripen. Try to avoid green or yellow bananas, they should at least begin to turn a bit brown. This will give the nice cream the perfect caramelised flavor. Peel the ripe bananas, cut into pieces and place them in a small plastic bag. Place them in the freezer over the night.
Take out the frozen banana pieces from the freezer and place them into the blender. Add the milk and blend until you get the consistency that reminds of ice cream.
I made two different flavors, therefore I took half of the nice cream out and placed it in a separate bowl. Add the chopped pineapple into the blender and mix it all together.
Add the cocoa powder into the nice cream in the bowl and mix it together.
Now you have two flavors nice cream. Serve it directly or place them in the freezer until you will serve them.
Sprinkle e.g. chopped almonds and chocolate over before serving.
As you can see, it’s already really warm in Florida and my nice cream started to melt in the summer heat. But it was all gone soon after I was done with taking pictures. 😉
