Strawberry birthday cake

This cake is a typical birthday cake in Scandinavia. You can also get it served as a dessert if you celebrate e.g. Midsummer in Sweden. I give this cake to my mom when we were celebrating her 70th birthday here in Florida.

Ingredients (1 cake): 

Cake

  • 3 organic eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla sugar
  • 3 1/2 tbs butter
  • 1/2 cup whole milk
  • 1 1/2 cup all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • butter and bread crumbs for the baking pan

Filling

  • 1/2 batch vanilla custard 
  • 12 oz fresh strawberries
  • 5 oz fresh raspberries
  • 2.5 oz fresh blueberries
  • 1/3 cup granulated sugar
  • 1 cup whipped cream

The cake:

Heat the oven to 350ºF. Stir egg, sugar and vanilla sugar until it gets white and airy. In parallel, mix flour, baking powder and salt in a bowl. Turn these dry ingredients into the egg mixture and stir it carefully together. Melt the butter in a saucepan on low heat. Add the milk when the butter has melted. Pour and mix the butter milk with the batter.

Use a spring form cake pan with detachable bottom. Butter the sides and sprinkle with bread crumbs. Pour the batter into the cake pan and bake in the oven for 25-30 minutes. Let the cake cool down before dividing the cake in three layers with a big knife.

Assemble the cake:

Turn the cake up side down. When dividing the cake in three layers, make sure the bottom layer is the thickest layer. Place the bottom layer cake on a nice serving plate. Mash 2/3 of the strawberries and mix with sugar. Spread the mashed strawberries on the first cake layer.

Add the next cake layer. Spread the vanilla custard on the second cake layer. Add the last cake layer, whip the cream and add on the third layer and on the sides so the whole cake is covered. Usa a spatula. Garnish the cake with fresh strawberries, raspberries and blueberries.
